Ingredients

half kg Raw mango
250 grams Jaggery
1 tablespoon Salt
1 tablespoon Black salt
1 tablespoon Cumin powder
Tips
Adjust the sweetness and tanginess of the sherbet by varying the amount of jaggery and raw mango used.
For a spicier twist, add a pinch of powdered black pepper or chaat masala.
Always store the prepared concentrate in an airtight container in the refrigerator to maintain freshness.
You can also freeze the concentrate in ice cube trays for longer shelf life.
Directions
Wash and peel 500 g of raw mangoes. Cut them into chunks and place them in a pressure cooker.
Add 0.25 cups of water to the cooker. Close the lid and cook for about 4 whistles or until the mangoes are soft and pulpy.
Once cooked, allow the mangoes to cool down. Then, peel off the skin and squeeze out the pulp into a bowl.
Strain the mango pulp using a strainer to remove any fibers or lumps.
In the strained mango pulp, add 250 g of jaggery, 1 tbsp of salt, 1 tbsp of black salt, and 1 tbsp of cumin powder. Mix well until the jaggery dissolves completely.
Transfer the prepared mango concentrate into an airtight container and store it in the refrigerator for up to a month.
To serve, take a glass and add 2-4 tbsp of the mango concentrate depending on taste preference.
Fill the glass with chilled water and stir well to combine.
Garnish with mint leaves or a slice of lemon if desired.
