Ingredients

half kg Beetroot
1 piece Onion
2 pieces Garlic Cloves
1 piece Carrot
1 piece Celery stalk
1 tablespoon Olive oil
1 Liter Vegetable Broth
Salt as per taste
Black pepper as per taste
1 tablespoon Lemon juice
Coriander as per taste
Tips
For extra creaminess, add a splash of coconut milk before blending.
Adjust the consistency by adding more vegetable broth if desired.

Directions
Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until fragrant.
Add chopped beetroot, carrot, and celery to the pot. Cook for 5 minutes, stirring occasionally.
Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until vegetables are tender.
Once cooked, use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
Season with salt, pepper, and lemon juice to taste. Stir well.
Ladle the soup into bowls, garnish with fresh coriander, and serve hot.
