Delve into the delightful world of Lal Bhoplyache Gharge, a traditional Maharashtrian delicacy bursting with the goodness of sweet pumpkin and aromatic jaggery. This recipe combines the earthy sweetness of pumpkin with the richness of jaggery to create a mouthwatering treat that's perfect for any occasion.
Ingredients
5
200 grams Grated red pumpkin
200 grams Jaggery
2 cups Wheat flour
1 teaspoon Cardamom powder
Oil as per choice
Tips
Adjust the sweetness according to your preference by increasing or decreasing the amount of jaggery.
Ensure the pumpkin-jaggery mixture is cooled down before adding wheat flour to prevent the dough from becoming too sticky.
Serve the pooris immediately after frying for the best taste and texture.
Directions
In a pan, heat grated red pumpkin and jaggery over medium heat. Cook until the mixture thickens.
Add cardamom powder and mix well. Remove from heat and transfer the mixture to a bowl.
Allow the mixture to cool slightly, then add wheat flour gradually until you form a soft dough. Adjust the quantity of flour as needed.
Divide the dough into small portions and roll them into small puris.
Heat oil in a deep pan for frying. Once hot, fry the puris until golden brown and crisp. Alternatively, you can air fry them for a healthier option.
Notes
Pumpkin is rich in antioxidants and vitamins, promoting healthy skin and eyesight. Jaggery provides iron and aids in digestion.
However, those with diabetes should consume it in moderation.
