2 Slices Sourdough bread or 1 ciabatta bread, halved lengthwise
1 tablespoon Olive oil
2 tbsp Basil pesto sauce
1 cup Fresh arugula or rocket leaves
half cup Buffalo Mozzarella
Basil Leaves as per taste
Tips

Directions
Prepare the Chicken
Marinate the chicken slices with salt, pepper, garlic powder, and onion powder.
Heat 1 tbsp of olive oil in a nonstick pan.
Sauté the chicken until golden brown on both sides, approximately 5-7 minutes per side.
Cook the Tomatoes
In the same pan, add the tomato slices and sprinkle with balsamic vinegar and salt.
Cook for 2 minutes or until slightly caramelized.
Toast the Bread
Toast the bread slices on both sides with olive oil until golden and crispy.
Assemble the Sandwich
Spread basil pesto sauce on one side of each bread slice.
Layer with fresh arugula or rocket leaves, sliced tomatoes, buffalo mozzarella, and fresh basil leaves.
Add the prepared chicken on top.
Close the sandwich with the other slice of bread.
Optionally, toast the assembled sandwich for a warm and crispy finish.
