Ingredients
4
0.6 kg Cauliflower Florets
1 piece Onion
2 pieces Garlic Cloves
2 tbsp Olive Oil
three quarters liter Vegetable broth
250 ml Milk
Salt as per taste
Black pepper as per taste
Tips
For a thicker soup, reduce the amount of vegetable broth or increase the amount of cauliflower.
Customize your toppings to suit your taste preferences. Experiment with different herbs, cheeses, or even a drizzle of olive oil.
This soup can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for longer storage.
Avoid this soup if you have a cauliflower allergy or sensitivity.
Directions
Wash the cauliflower thoroughly and cut it into small florets.
In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until fragrant and translucent, about 5 minutes.
Add cauliflower florets to the pot. Stir well to combine with the aromatics. Cook for another 5 minutes, allowing the cauliflower to slightly brown.
Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the cauliflower is fork-tender.
Once the cauliflower is cooked, use an immersion blender or transfer the mixture to a blender (in batches if necessary) and blend until smooth and creamy.
Return the blended soup to the pot if using a blender. Stir in the milk and season with salt and pepper to taste. Heat the soup over low heat until warmed through.
Ladle the creamy cauliflower soup into bowls. Serve hot, garnished with your choice of toppings such as fresh herbs, croutons, or grated cheese.
