Directions

In a bowl, mix chicken with turmeric, red chili powder, salt, coriander powder, cumin powder, biryani masala, ginger garlic paste, and yogurt.

Marinate for 30-60 minutes in the fridge.

Biryani Gravy

Ingredients

4 tbsp Oil

2 pieces Bay leaves

1 piece Black cardamom

4 pieces Black Peppercorns

2 pieces Cloves

1 piece Star anise

1 piece Cinnamon stick

3 pieces Cardamom pods

3 pieces Onions

2 pieces Green Chilies

quarter cup Coriander and mint leaves

Tips

Adjust spice levels according to personal preference.

Directions

Heat oil in a kadhai and add bay leaves, black cardamom, black peppercorns, cloves, star anise, cinnamon stick, and cardamom pods.

Add sliced onions and sauté until golden brown.

Add marinated chicken, green chilies, and chopped coriander and mint leaves. Mix well.

Cover and cook for 7-8 minutes.

Rice Preparation

Ingredients

half kg Basmati Rice

4 Liters Water

2 pieces Bay leaves

1 piece Black cardamom

1 piece Star anise

1 piece Javitri

2 pieces Cloves

4 pieces Black Peppercorns

4 pieces Cardamom pods

Salt as per taste

4 tbsp Chopped coriander

2 tbsp Mint leaves

Lemon as per taste

Directions

Soak basmati rice for 45 minutes.

Boil water in a saucepan and add bay leaves, black cardamom, star anise, javitri, cloves, black peppercorns, cardamom pods, salt, chopped coriander, mint leaves, and lemon juice.

Add soaked rice and cook for 6-7 minutes. Strain the rice and remove the spices.

Biryani Assembly

Ingredients

3 pieces Fried Onions, Sliced

half teaspoon Garam masala

4 tbsp Saffron water

2 tbsp Kewra water

Tips

Use good quality saffron for a vibrant color and rich aroma.

Directions

Fry sliced onions until brown.

In a heavy-based pot, layer cooked chicken gravy, fried brown onions, coriander and mint leaves, and a layer of cooked rice.

Repeat the layers and top with garam masala, saffron water, kewra water, and fried brown onions.

Seal the pot with flour dough and cook for 15 minutes on low to medium flame.
