Chicken Do Pyaza, a traditional Indian dish, is a flavorful blend of tender chicken and caramelized onions cooked in a rich, spicy gravy. The dish gets its name from the generous use of onions, added at two different stages of cooking, giving it a unique, layered flavor. Perfect for a hearty meal, this dish pairs well with tandoori rotis or steamed rice, making it a favorite for festive occasions or a special weekend dinner.

quarter teaspoon Turmeric powder
half teaspoon Kashmiri red chilli powder
half piece Lemon
2 tbsp Ginger garlic paste
2 tbsp Ghee
2 tbsp Oil
1 teaspoon Cumin seeds
1 piece Cinnamon stick
2 pieces Green cardamom
4 pieces Cloves
2 pieces Bay leaf
1 piece Black cardamom
5 pieces Black Peppercorns
half teaspoon Asafoetida
6 pieces Onions
2 tbsp Ginger garlic paste
1 teaspoon Turmeric powder
Hot water as per needed

1 tablespoon Kashmiri red chilli powder
half cup Curd
2 tbsp Coriander powder
1 teaspoon Spicy red chilli powder
1 teaspoon Cumin powder
1 teaspoon Fennel seed powder
1 tablespoon Ghee
2 pieces Kashmiri red chillies
1 teaspoon Crushed coriander seeds
3 pieces Green chillies, slit
1 piece Onion, petals
1 piece Tomato
1 teaspoon Roasted kasuri methi powder
1 pinch Garam Masala

Tips

Directions
In a large bowl, combine the chicken with salt, turmeric powder, Kashmiri red chilli powder, lemon juice, and ginger garlic paste. Mix well to coat the chicken evenly. Set it aside to marinate while you prepare the gravy.
Heat a handi or deep pan over high heat and add ghee along with oil. Once hot, add cumin seeds, cinnamon, green cardamom, cloves, bay leaf, black cardamom, black peppercorns, and asafoetida. Sauté for a few seconds until the spices release their aroma.
Add the sliced onions and cook over high flame, stirring continuously, until they turn light golden brown.
Add the ginger garlic paste and turmeric powder, and continue to cook until the onions turn completely golden brown.
Stir in the chopped tomatoes, salt, and Kashmiri red chilli powder. Cook on high flame until the oil starts to separate from the gravy. If the mixture becomes too dry, add a splash of hot water as needed.
In a separate bowl, whisk the curd with coriander powder, spicy red chilli powder, cumin powder, and fennel seed powder until smooth, ensuring there are no lumps.
Add this curd mixture to the gravy and stir well. Continue cooking until the oil separates from the gravy.
Add the marinated chicken to the gravy and stir well to coat the chicken with the spices. Sear the chicken for 4-5 minutes.
Cover the handi with a lid and cook on low flame for 10-12 minutes, allowing the chicken to cook through.
Meanwhile, in a separate pan, heat ghee over high flame. Add Kashmiri red chillies, crushed coriander seeds, slit green chillies, onion petals, and tomato quarters. Toss them on high flame for about 30 seconds and immediately add this mixture to the chicken.
Stir well and cook on high flame until the chicken is fully cooked.
Finish the dish by adding a pinch of roasted kasuri methi powder, garam masala, and fresh coriander. Stir well, adjust the seasoning if needed, and serve hot with tandoori rotis.
Notes
Individuals with high cholesterol or heart conditions should limit their intake due to the dish's fat content.
Those with a sensitive stomach may find the spices too intense.
