2 tbsp Grated Coconut
1 tablespoon Tamarind Paste
1 tablespoon Jaggery
2 tbsp Peanuts, Roasted
1 tablespoon Oil
1 teaspoon Cumin Seeds
half teaspoon Turmeric Powder
half teaspoon Red chili powder
half teaspoon Salt
Tips
You can adjust the spiciness of the chutney by varying the number of green chilies.
For added flavor, try adding a handful of roasted peanuts while blending.
Store any leftover chutney in an airtight container in the refrigerator for up to a week.
Directions
Wash the cluster beans thoroughly and chop them into small pieces.
In a pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
Add chopped cluster beans and sauté for about 5 minutes until slightly tender.
Remove from heat and let it cool. In a blender, combine the cooked cluster beans, grated coconut, tamarind paste, jaggery, roasted peanuts, turmeric powder, red chili powder, and salt.
Blend until you achieve a smooth consistency. Add a little water if needed to adjust the thickness.
Taste the chutney and adjust salt or jaggery as per your preference.
Transfer the chutney to a serving bowl and enjoy with your favorite dishes!
