1 cup Curry leaves
3 tbsp Oil
1 piece Bay leaf
0.33 cup Peanuts
1 tablespoon Chana dal
1 tablespoon Urad dal
quarter cup Roasted chana dal
1 tablespoon Coriander seeds
3 pieces Red chilies
1 tablespoon Cumin seeds
Salt as per taste

Directions
Heat the oil: In a pan, heat 3 tablespoons of oil over medium heat.
Saute Spices: Add 1 bay leaf, 0.33 cup peanuts, 1 tablespoon chana dal, 1 tablespoon urad dal, 0.25 cup roasted chana dal, 1 tablespoon coriander seeds, and 3 dried red chillies to the heated oil. Mix well and sauté until the lentils turn golden brown.
Add Curry Leaves: Once the lentils are golden brown, add 1 tablespoon cumin seeds and 1 cup of fresh curry leaves to the pan. Roast on low to medium flame for about 10 minutes until the curry leaves turn crisp.
Cool and Grind: Allow the mixture to cool down. Once cooled, grind the mixture into a smooth paste using a blender or mortar and pestle.
Serve: Your fragrant Curry Leaves Chutney is ready to be served! Enjoy it with dosa, idli, or any of your favorite South Indian dishes.
