half cup Coriander leaves
quarter cup Mint leaves
1 Tbs Coriander seeds
6 pieces Garlic
1 inch Ginger
4 pieces Black pepper
half teaspoon Poppy seeds
1 Tbs Oil
1 teaspoon Cumin seeds
1 piece Onion
2 pieces Tomatoes
half teaspoon Turmeric powder
1 teaspoon Garam masala
6 pieces Boiled eggs
Salt as per taste

Tips
You can adjust the consistency of the curry by adding more or less water.
For added richness, you can substitute water with coconut milk.
Garnish with fresh coriander leaves for extra flavor and presentation.
Directions
In a mixer jar, combine 0.5 cup fresh coconut, 0.5 cup coriander leaves, 0.25 cup mint leaves, 1 tablespoon coriander seeds, 6 garlic cloves, 1 inch ginger, 4 black peppercorns, and 0.5 teaspoon poppy seeds. Add water and blend to form a smooth paste.
Heat 1 tablespoon oil in a pan. Add 1 teaspoon cumin seeds and allow them to crackle. Add chopped onion and sauté until golden brown. Add the finely chopped tomatoes, salt, and a little water. Cook until the tomatoes turn mushy.
Add the prepared green masala paste to the pan. Sauté well for 3-4 minutes to let the flavors meld. Add 0.5 teaspoon turmeric powder and 1 teaspoon garam masala. Mix well.
Add the boiled eggs to the pan. Add a little water to adjust the consistency according to your preference. Mix everything well and cook for another 4-5 minutes.
Serve the Healthy Egg Curry in Green Masala hot with steamed rice or roti.
