2 cups Refined flour
1 teaspoon Salt
quarter cup Curd
2 tbsp Unsalted butter
1 cup Powdered sugar
2 tbsp Milk
1 teaspoon Vanilla essence
1 cup Powdered sugar
3 tbsp Cocoa powder
3 tbsp Milk
1 teaspoon Vanilla essence

Directions
In a bowl, mix lukewarm milk, water, and 1 teaspoon of powdered sugar. Stir to dissolve the sugar, then add the yeast and stir until dissolved. Cover the bowl and let it sit for 5-10 minutes until frothy.
In a large bowl, sift together the refined flour, remaining powdered sugar, and salt. Mix well.
Add the curd and mix until incorporated.
Pour in the yeast mixture and combine with your hands to form a dough.
Transfer the dough to a flat surface and knead until smooth and non-sticky. Incorporate the softened butter in two batches, kneading well for 10-12 minutes until the dough is very soft and smooth. Check if the dough is ready by stretching a small portion to form a thin, almost transparent sheet (gluten window).
Shape the dough into a ball and place it in a greased bowl. Drizzle a few drops of oil over the surface of the dough. Cover with cling wrap or a wet cloth and let it ferment in a warm place until doubled in size (about 1-1.5 hours).
Once the dough has risen, punch it down and transfer it to a floured surface. Roll out the dough to about 1.5 cm thick.
Cut out donuts using a donut cutter or two different-sized cookie cutters. Place the cut donuts on a parchment-lined tray. Cover with a damp cloth and let rise again for 45 minutes to an hour (bench proofing).
Classic Glaze: In a bowl, mix powdered sugar, milk, and vanilla essence until smooth.
Chocolate Glaze: Mix powdered sugar, cocoa powder, salt, milk, and vanilla essence until smooth.
Heat oil in a deep pan to 175°C (350°F).
Fry the donuts in batches, carefully dropping them into the hot oil. Fry until golden brown, about 1 minute per side. Do not overcrowd the pan.
Transfer to a wire rack to cool slightly.
While still warm, dip the donuts into your choice of glaze. Add sprinkles to the chocolate-glazed donuts if desired. Allow excess glaze to drip off before serving.
Serving Size: 8-10 donuts (depending upon the size)
