Gobhi 65 is a delightful vegetarian twist on the classic Chicken 65, replacing chicken with cauliflower. Originating from the diverse culinary landscapes of India, this dish is renowned for its vibrant flavors and satisfying crunch. It combines spices and herbs in a rich, colorful batter, enveloped around tender cauliflower florets, making it a perfect starter or a side dish that brings a zesty kick to any meal.

Water as per needed
half teaspoon Salt
half cup Rice flour
half cup Corn flour
1 tablespoon Kashmiri red chilli powder
quarter teaspoon Garam masala
half teaspoon Cumin powder
1 teaspoon Black pepper powder
25 pieces Curry leaves
3 tbsp Curd
1 tablespoon Hot oil
1 tablespoon Oil
1 tablespoon Ginger
4 pieces Garlic Cloves
4 pieces Green chillies
Tips
For a gluten-free version, substitute corn flour with chickpea flour.
Adjust the level of green chillies based on your preference for heat.
Ensure the oil is hot enough before frying to prevent the cauliflower from absorbing too much oil and becoming soggy.
Directions
Soak cauliflower florets in salted water for 3-4 minutes to clean. Rinse and set aside.
Blend ginger, garlic, and green chillies with a little water to form a smooth paste.
Combine rice flour, corn flour, spices, salt, green paste, curry leaves, and curd in a bowl. Whisk while gradually adding water to achieve a semi-thin consistency. Stir in hot oil lastly.
Coat the florets evenly with the batter.
Deep fry in oil at 170°C until golden. Drain and allow to rest, then flash fry for extra crispiness.
Heat oil, add garlic, green chilli, and curry leaves, sauté for 1-2 minutes. Toss in the fried cauliflower and season with crushed black pepper.
