300 grams Green Beans
10 pieces Garlic cloves
3 pieces Kashmiri chilies
half teaspoon Black Peppercorns
2 tbsp Roasted Peanuts
1 teaspoon Soy Sauce
1 teaspoon Apple cider vinegar
2 Teaspoons Sesame seeds
1 tablespoon Sesame Oil
Salt as per taste
Tips
For a nut-free version, substitute peanuts with sunflower seeds or omit nuts entirely.
Adding a splash of lime juice at the end of cooking can enhance the flavors.
If sesame oil is too strong for your taste, use a milder oil like canola or vegetable oil.
Directions
Wash and trim the ends of the green beans.
Peel and finely chop the garlic cloves.
If using whole chilies, deseed and chop them, or leave them whole for less heat.
Crush the black peppercorns slightly.
Bring a pot of water to a boil, add a pinch of salt, and blanch the green beans for about 3-4 minutes until they are vibrant and slightly tender. Drain and set aside.
In a dry pan, toast the sesame seeds over medium heat until golden. Remove and set aside.
In the same pan, heat the sesame oil. Add the chopped garlic, chilies, and crushed peppercorns. Sauté for a minute until fragrant.
Add the blanched green beans and stir well to coat with the spices.
Stir in the soy sauce and apple cider vinegar, and cook for another 5 minutes until the beans are well seasoned and slightly crispy.
Toss the stir-fried beans with the roasted peanuts and toasted sesame seeds.
Serve hot as a side dish or a light main course.
