1 tablespoon Ginger garlic paste

125 grams Hung curd

10 grams Chili powder

5 grams Coriander powder

5 grams Cumin

5 grams Amchur powder

1 gram Black Salt

2 & half grams Garam Masala

20 grams Roasted besan

5 ml Mustard oil

50 grams Onion Petals

50 grams Tomatoes

50 grams Capsicum

Directions

Horizontally slice 250 grams of chicken breast into two halves, then further slice into thin pieces.

Transfer the sliced chicken into a mixing bowl.

Mix well and let it marinate for 30 minutes.

In a separate bowl, mix 125 grams of hung curd, 10 grams of red chili powder, 5 grams of coriander powder, 5 grams of cumin powder, 5 grams of amchur powder, 1 gram of black salt, 2.5 grams of garam masala, and salt to taste.

Add 1 tablespoon of ginger garlic paste and 20 grams of roasted besan.

Mix in 5 ml of mustard oil.

Add the pre-marinated chicken along with 50 grams each of onion petals, diced tomatoes, and diced capsicum.

Coat well and marinate for an additional 15-20 minutes.

Thread the marinated chicken, onion petals, tomatoes, and capsicum onto the soaked bamboo skewers.

Heat a grill pan over medium heat and add oil.

Grill the chicken tikkas from all sides until fully cooked and grill marks appear.

Place the grilled chicken tikkas on a plate.

Shape aluminum foil into a small bowl, place a live charcoal piece inside, and add a few drops of ghee.

Cover and allow to smoke for 1-2 minutes for an enhanced flavor.
