2 Liters Boiling water
2 cups Bottle gourd, peeled and chopped
1 cup Carrots, cut into roundels
1 cup Tomatoes, diced
half cup Beetroot, peeled and chopped
half cup Onion, finely chopped
1 inch Ginger, julienned
Salt as per taste
1 teaspoon Cumin powder
1 pinch Black pepper powder
1 teaspoon Lemon juice
Tips
Feel free to add other vegetables like spinach or bell peppers based on your preference.
If you prefer a chunkier soup, blend only half of the vegetables and leave the rest as chunks.
Directions
In a wok, bring the boiling water to a simmer and add all the vegetables along with salt. Cook covered until the vegetables are tender.
Allow the cooked vegetables to cool completely. Blend them into a smooth puree.
Use a strainer to remove any fibrous bits from the puree, ensuring a smooth texture.
Heat a wok, add the strained vegetable puree, and season with salt, cumin powder, and black pepper. Mix well.
Add hot water as needed to achieve your desired soup consistency.
