Ingredients

12 pieces Green chilies, Chopped
half teaspoon Cumin seeds
1 teaspoon Mustard seeds
1 teaspoon Fennel seeds
quarter teaspoon Fenugreek seeds
half teaspoon Turmeric powder
quarter teaspoon Asafoetida
1 teaspoon Salt
quarter cup Oil
1 teaspoon Vinegar
half piece Lemon

Directions
In a pan, dry roast cumin seeds, mustard seeds, fennel seeds, and fenugreek seeds until fragrant. Allow to cool.
Transfer the roasted seeds to a mixer grinder and grind into a fine powder.
In a bowl, combine the chopped green chillies with the ground spice mixture, turmeric powder, hing, and salt.
Heat the oil until it's hot but not smoking, then allow it to cool slightly.
Pour the cooled oil over the green chilli mixture.
Add vinegar and lemon juice, then mix well.
Set the pickle aside for 2-3 hours to allow the flavors to meld.
Your instant green chilli pickle is ready to serve!
