2 cups Milk powder
1 cup Milk
1 tablespoon Ghee
10 pieces Strands kesar
quarter teaspoon Cardamom powder
half cup Sugar
Tips
Use a heavy-bottomed pan to avoid burning the mixture.
Stir continuously to ensure even cooking and prevent sticking.
Adjust sweetness according to your taste preference by varying the sugar quantity.
Directions
In a pan, combine milk and milk powder while the pan is off the heat. Whisk well to ensure there are no lumps.
Place the pan on a low flame and cook the mixture while stirring continuously for about 5 minutes. Use a heavy-bottomed pan or wok to prevent sticking.
Once the mixture starts to thicken, add ghee, saffron strands, and cardamom powder. Stir well and cook on low heat until the consistency is semi-thick.Continuous stirring is crucial to prevent burning.
Add sugar (or castor sugar if preferred) once the mixture reaches a semi-thick consistency. If using powdered sugar, add it once the khoya is done.
Continue cooking until the mixture thickens to a dough-like consistency and ghee starts to separate.
Transfer the khoya to a bowl and let it cool slightly, but not completely. Shape spoonfuls of the mixture into balls, applying pressure between your palms. If the mixture sticks, apply ghee to your hands.
Pinch the top of each ball to form a cone shape. Use the side of a fork to make light incisions for decoration. Shape all modaks in the same manner.
Store the modaks at room temperature for up to a day or refrigerate for about a week.
Serving: 35-40 small modak (400G total weight).
