half cup Yogurt
half cup Water
half teaspoon Baking soda
1 piece Onion
1 piece Carrot
1 piece Green chili
2 tbsp Coriander leaves
Salt as per taste
1 teaspoon Oil
Tips
Adjust the spice level according to your preference by increasing or decreasing the amount of green chili.
Ensure the batter is of pouring consistency; if it's too thick, adjust by adding a little more water.
To make the appe more nutritious, you can add finely chopped spinach, grated zucchini, or cooked peas to the batter.
Directions
In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a smooth batter without any lumps.
Add baking soda to the batter and mix gently. Allow the batter to rest for 10-15 minutes to ferment slightly.
After resting, add chopped onion, grated carrot, green chili, coriander leaves, and salt to the batter. Mix until all ingredients are evenly incorporated.
Heat an appe pan (also known as aebleskiver pan) on medium heat and grease each cavity with a little oil.
Pour spoonfuls of the batter into each cavity, filling them up to three-fourths full.
Cover the pan and cook the appe on medium-low heat for 2-3 minutes or until the bottom side turns golden brown.
Using a skewer or spoon, flip each appe and cook the other side for another 2-3 minutes or until golden brown and crispy.
Once cooked, transfer the appe to a serving plate and repeat the process with the remaining batter.
Serve hot with chutney or sauce of your choice.
