2 cups Wheat flour
quarter cup Gram flour
quarter teaspoon Turmeric powder
quarter teaspoon Salt
1 teaspoon Cardamom powder
half cup Jaggery
half cup Water

Tips
Roll the puris thin to ensure they turn out crispy.
Fry on medium heat to get the perfect golden color without burning.
You can add a pinch of fennel seeds to the dough for added flavor.
Store the fried pooris in an airtight container to keep them crispy for longer.
Directions
In a large bowl, combine the wheat flour, gram flour, turmeric powder, salt, and cardamom powder. Mix well until the dry ingredients are thoroughly combined.
In a separate bowl, add water and jaggery. Stir well until the jaggery completely dissolves in the water. Strain the mixture to remove any impurities.
Slowly pour the jaggery syrup into the dry ingredients. Add hot oil to the mixture and start kneading the dough. The dough should be firm but pliable.
Cover the dough and let it rest for about 30 minutes. This helps to soften and infuse flavors.
Knead the dough again after resting. Divide the dough into small, equal-sized balls. Roll each ball into thin circles (puris).
Heat oil in a deep pan. Fry the puris on medium-high heat until they turn golden and crisp. Make sure to fry them evenly on both sides.
Serve the crispy sweet pooris warm and enjoy them with your family and friends during the Dussehra festival.
Makes about 25-30 pooris, depending on size.
