half cup Rice flour
half cup Gram flour
1 tablespoon Red chili powder
1 tablespoon Turmeric powder
1 tablespoon Cumin powder
half tablespoon Coriander powder
1 tablespoon Garam masala
1 tablespoon Chaat masala
1 teaspoon Salt
1 tablespoon Lemon juice
half kg Okra (bhindi)
half cup Oil
Tips
Ensure the okra is completely dry before coating to prevent excess moisture, which can make the coating soggy.
Fry the okra in batches to ensure they crisp up evenly and do not overcrowd the pan.
For extra crunch, you can add a pinch of baking soda to the flour mix.
Directions
Wash the okra thoroughly and pat it dry with a kitchen towel. Slice them thinly into rings.
In a large mixing bowl, combine rice flour, gram flour, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, chaat masala, and salt. Mix well.
Drizzle lemon juice over the sliced okra and toss to coat evenly.
Sprinkle the flour mixture over the okra and toss until all slices are well-coated.
Heat oil in a deep pan or skillet over medium heat.
Carefully add the coated okra slices to the hot oil. Fry in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes per batch.
Remove the fried okra with a slotted spoon and drain on paper towels. Serve hot as a snack or side dish.
