Directions
In a large mixing bowl, combine the all-purpose flour, ghee, and salt.
Gradually add water and knead until a smooth, elastic dough forms.
Divide the dough into 6 equal-sized balls and let them rest for 15 minutes, covered with a damp cloth.
Roll out each ball into a thin circle using a rolling pin.
Brush the surface with ghee and sprinkle with a little flour.
Starting from one end, make pleats or folds like a paper fan.
Roll the pleated dough tightly into a coil.
Flatten the coil gently with your palm and roll it out again into a thin circle.
Heat a skillet or tawa over medium heat and cook each paratha with a little ghee until golden brown spots appear on both sides.
Serve hot with your favorite curry.
