1 & half cups Carrots, Chopped
1 & half cups Green beans, Chopped
1 & half cups Squash, Chopped
2 cups Water
1 teaspoon Cumin seeds
6 pieces Black Peppercorns
1 inch Cinnamon
10 pieces Cloves
10 pieces Cardamom pods
2 tbsp Ghee
half teaspoon Salt
Directions
Wash the mixed vegetables thoroughly and cut them into bite-sized pieces.
In a large soup pot, combine the vegetables and water. Cover and cook on medium heat until the vegetables are just tender. Set aside in a bowl.
Grind cumin seeds, peppercorns, cinnamon stick, cloves, and cardamom pods into a fine powder using a mortar and pestle or a blender.
Heat a soup pot on medium heat and add ghee. Once melted, add the ground spices and sauté for a moment, being careful not to burn them.
Stir in salt and add 4 cups of the vegetable broth from step 2. Bring to a boil and let it simmer for 2 minutes.
