Ingredients

1 kg Mutton trotters
1 piece Chopped Onion
4 pieces Garlic Cloves
1 tablespoon Grated ginger
2 pieces Finely Chopped Tomatoes
2 pieces Green Chilies
1 teaspoon Turmeric powder
1 tablespoon Coriander powder
1 tablespoon Cumin powder
1 teaspoon Garam masala
Salt as per taste
2 tbsp Oil
Water as per choice

Directions
Heat oil in a large pot over medium heat. Add chopped onions and sauté until golden brown.
Add minced garlic and grated ginger. Sauté for another minute until fragrant.Add chopped tomatoes and green chilies.
Cook until tomatoes are soft and mushy.Add turmeric powder, coriander powder, cumin powder, and garam masala.
Mix well and cook for 2-3 minutes.Add cleaned and chopped mutton trotters (paya) to the pot.
Season with salt and mix until well combined.Pour enough water to cover the trotters.
Bring to a boil, then reduce heat to low. Cover and simmer for 2.5 to 3 hours, or until the trotters are tender and the soup is flavorful.
Once cooked, adjust seasoning according to taste.Garnish with fresh coriander leaves and serve hot.
Notes
For a richer flavor, you can roast the spices before adding them to the soup.
Remove excess fat from the trotters before cooking to reduce the overall fat content of the soup.
You can add vegetables like carrots and potatoes for added nutrition and texture.
This soup tastes even better the next day as the flavors intensify upon reheating.
