1 piece Onion
half piece Capsicum
3 pieces Green Chilies
1 tablespoon Oil
1 teaspoon Mustard seeds
1 teaspoon Jeera
6 pieces Curry leaves
half teaspoon Turmeric powder
half teaspoon Coriander powder
half teaspoon Kitchen king masala
half teaspoon Red chili powder
100 grams Paneer
Salt as per taste
Tips
Use low-fat paneer to make the dish healthier.
Adjust the green chilies and red chili powder according to your preference.
Directions
Finely chop the onion, tomato, and capsicum. Slit or chop the green chilies.
Shred the paneer into small pieces.
In a pan, heat 1 tbsp of oil over medium heat.
Add mustard seeds and cumin seeds (jeera). Let them crackle.
Add 6-7 curry leaves to the oil, and sauté for a few seconds.
Add the finely chopped onions and sauté until they turn translucent.Add the chopped tomatoes, capsicum, and green chilies. Cook for 2-3 minutes until the vegetables soften.
Sprinkle turmeric powder, coriander powder, kitchen king masala, and red chili powder. Stir well to coat the veggies in the spices.
Add the shredded paneer to the pan and mix it well with the vegetable-spice mixture.
Cook for another 3-4 minutes, allowing the flavors to combine.
Add salt to taste and give a final mix.
Serve hot with roti, paratha, or rice.
Notes
People who are lactose intolerant or have dairy allergies should avoid paneer bhurji.
Those with a history of kidney stones may need to avoid excessive amounts of paneer due to its high calcium content.
