2 & half cups Potatoes
1 & half cups Capsicum
1 cup Onions
2 tbsp Oil
1 teaspoon Mustard seeds
1 teaspoon Cumin seeds
1 teaspoon Turmeric powder
1 teaspoon Coriander powder
1 teaspoon Cumin powder
1 teaspoon Garam masala
1 teaspoon Red chili powder
Salt as per taste
2 tbsp Coriander
Tips
For quicker cooking, parboil the potatoes before adding them to the pan.
Directions
Heat Oil: In a large pan, heat the oil over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, proceed to the next step.
Sauté Onions: Add the finely chopped onions and sauté until they turn golden brown.
Add Spices: Stir in the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
Cook Potatoes: Add the diced potatoes and cook for about 10 minutes, stirring occasionally.
Add Capsicum: Incorporate the diced capsicum and mix everything thoroughly. Cover and cook for another 10-15 minutes, or until the potatoes and capsicum are tender.
Finish with Garam Masala: Stir in the garam masala and cook for an additional 2 minutes.
Garnish: Garnish with chopped cilantro before serving.
