50 grams Butter
1 piece Onion
2 pieces Garlic Cloves
half liter Vegetable broth
250 ml Whole milk
Salt as per taste
Black pepper as per taste
50 grams Cheese

Directions
In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
Add the diced potatoes to the pot, stirring to coat them with the buttery mixture. Allow them to cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth, covering the potatoes completely. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
Once the potatoes are cooked, use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer the mixture to a blender and blend in batches until smooth.
Pour in the whole milk, stirring to combine. Season with salt and pepper to taste, adjusting as needed.
Serve the potato soup hot, garnished with grated cheese, chopped chives or parsley, and a sprinkle of freshly ground black pepper if desired.
