Puran Poli is a classic Indian sweet flatbread traditionally prepared during festivals like Holi and Ganesh Chaturthi. Made with a filling of chana dal (split Bengal gram) and jaggery, this delicacy is known for its rich flavor, soft texture, and aromatic spices like cardamom and nutmeg. 1 pinch Salt | नमक
quarter teaspoon Turmeric powder | हल्दी पाउडर
2 tsp Oil | तेल
1 cup Water | पानी
1 tablespoon Oil | तेल
1 cup Chana dal | चना दाल
4 cups Water | पानी
quarter teaspoon Turmeric powder | हल्दी पाउडर
1 pinch Salt | नमक
1 teaspoon Oil | तेल
1 cup Jaggery | गुड़
half teaspoon Cardamom powder | इलायची पाउडर
quarter piece Nutmeg | जयफल
Tips
Ensure the puran is well-cooked and thickened before stuffing to prevent it from oozing out while rolling.
Always use warm ghee while cooking puran poli for a rich flavor.
The dough should be soft and pliable; you can adjust the water quantity based on the dough's consistency.
Directions
In a mixing bowl, combine wheat flour, refined flour, salt, turmeric powder, and oil.
Gradually add water and knead the mixture into a soft, smooth dough.
Once the dough is prepared, apply 1 tablespoon of oil over it and cover with a damp cloth.
Let the dough rest for at least 30 minutes to make it pliable and easy to roll.
Rinse the chana dal thoroughly and soak it in water for 30 minutes.
Drain the soaked dal and add it to a pressure cooker with 4 cups of water, turmeric powder, salt, and oil.
Cook the dal on medium heat for 3-4 whistles, or until it becomes soft and mushy.
Drain any excess water and mash the dal well.
In a pan, combine the mashed dal with chopped jaggery and cook on low heat until the jaggery melts and blends with the dal.
Add cardamom powder and grated nutmeg to the mixture, stirring continuously until it thickens and forms a soft, cohesive mixture.
Allow the puran to cool down to room temperature.
Divide the dough into equal-sized balls, slightly larger than a lemon.
Similarly, divide the puran filling into equal portions.
Dust the rolling surface with rice flour and roll out a dough ball into a small circle.
Place a portion of puran in the center of the rolled dough and gently fold the edges over the filling, sealing it completely.
Roll out the filled dough ball carefully into a thin, even circle.
Heat a tawa (griddle) and cook the rolled puran poli on medium heat, applying ghee on both sides, until golden brown and crisp.
Serve the hot puran poli with a generous dollop of ghee on top.
Notes
Due to the high sugar content in jaggery, people with diabetes should consume puran poli in moderation.
Individuals following a low-carbohydrate diet may need to limit their intake of puran poli due to its carbohydrate-rich ingredients.
