Turai Ki Sabzi, also known as Ridge Gourd Curry or Dodka, is a simple yet nutritious Indian dish made from sponge gourd. This vegetable is known for its high water content and low calories, making it an ideal choice for those looking to maintain a healthy diet. Turai Ki Sabzi is easy to prepare and can be enjoyed with chapati, fulkas, or khichdi. This dish is not only delicious but also packed with essential nutrients that support overall health.

2 pieces Onion | प्याज़
2 pieces Tomato | टमाटर
3 tbsp Ghee | घी
half teaspoon Turmeric powder | हल्दी पाउडर
1 teaspoon Kashmiri red chilli powder | कश्मीरी लाल मिर्च पाउडर
Salt | नमक as per taste
1 pinch Black pepper | काली मिर्च
1 pinch Garam masala | गरम मसाला
Coriander | हरा धनिया as per needed
Tips
For a spicier version, increase the quantity of red chili powder or add green chilies.
Always cook turai on low heat to retain its moisture and ensure it cooks evenly.
Pair this sabzi with fresh homemade yogurt for added flavor and nutrition.
Adding a squeeze of lemon at the end can enhance the flavors and increase vitamin C content.
Directions
Wash and peel 1 kg of sponge gourd (ridge gourd) and cut it into small dices.
Heat 3 tbsp of ghee in a kadhai over high flame. Once the ghee is hot, add 2 chopped onions and stir well. Cook the onions over high flame until they turn translucent.
Add 0.5 tsp turmeric powder and a pinch of Kashmiri red chili powder to the onions. Stir well to combine.
Add 2 chopped tomatoes and salt to taste. Cook the tomatoes over high flame until they turn slightly mushy.
Add the diced turai (sponge gourd) to the kadhai and stir well. Cover the kadhai with a lid, reduce the flame to low, and cook until the turai is fully cooked and releases its moisture. This process will take about 15 minutes.
Once the turai is cooked, remove the lid and cook over high flame while stirring continuously until all the moisture evaporates and the ghee separates from the sabzi. This should take about 7-8 minutes.
Taste and adjust the salt if necessary. Add a pinch of freshly crushed black pepper, a pinch of garam masala, and a handful of chopped fresh coriander. Stir well to combine all the flavors.
