This Ridge Gourd Sabji with Green Chillies is a simple yet flavorful dish that pairs perfectly with roti, bhakari, or rice.

0.06 cup Cumin seeds
0.02 cup Hing
4 pieces Green chillies
0.06 cup Ginger & Garlic Paste
0.02 cup Turmeric powder
250 grams Ridge gourd, washed , peeled , and chopped
Salt as per taste

Directions
Preparation: Wash and peel the ridge gourd. Cut it into small pieces.
Tempering: Heat the oil in a pan. Add mustard seeds and cumin seeds. When they start to splutter, add asafoetida and chopped green chillies. Sauté well.
Adding Spices: Add the grated ginger garlic paste and sauté until the raw smell goes away.
Cooking Ridge Gourd: Add turmeric powder and the chopped ridge gourd. Mix well.
Cooking: Add a little water and salt. Cover the pan and let it cook until the ridge gourd is tender.
Garnishing: Garnish with fresh grated coconut and chopped coriander.
Serving: Serve hot with roti, bhakari, or rice.
