Salt as per taste
Black Pepper Powder as per needed
1 teaspoon Ginger garlic paste
2 tbsp Refined flour
8 tbsp Cornflour
1 tablespoon Oil
1 tablespoon Chopped onion
1 teaspoon Chopped ginger
1 tablespoon Chopped garlic
1 tablespoon Chopped yellow bell pepper
1 tablespoon Chopped capsicum
1 tablespoon Chopped red bell pepper
3 pieces Slit green chillies
quarter teaspoon Vinegar
1 pinch Crushed black pepper
1 pinch Sugar
half cup Spring onion greens
Tips
Ensure the corn is dried after boiling to avoid splatter during frying.
Gradual addition of corn flour ensures a crispier texture.
Adjust the heat while frying to ensure even cooking without burning.
Directions
Prep the Corn: Boil the corn kernels for 3-4 minutes, then cool in a mixing bowl, spreading them to release steam.
Season and Coat: Mix in salt, ginger garlic paste, and black pepper. Add refined flour and 3 tbsp of cornflour. Mix lightly, then moisten with water and recoat with cornflour, repeating 3-4 times.
Fry the Corn: Heat oil for deep frying. Sift excess flour from corn and fry in batches at 165°C until crisp. Drain excess oil.
Toss: Heat oil in a wok, add onions, ginger, garlic, bell peppers, and green chili. Sauté for a minute, add fried corn and remaining ingredients, and toss for another minute.
