6 cups Water

1 cup Chopped green beans

1 cup Carrots

1 cup Bottle gourd

1 teaspoon Turmeric powder

1 cup Spinach

2 pieces Green chillies

1 cup Tomatoes, Chopped

half cup Coconut flakes

2 tsp Rock salt

half cup Coriander leaves

Soak the brown rice for at least 30 minutes before cooking to ensure even cooking and softer texture.

Directions

In an earthenware pot, add the soaked brown rice along with 6 cups of water. Cook on a low flame for about 45 minutes until the rice becomes soft. Stir occasionally to prevent sticking.

Once the rice is cooked, add the green beans, grated carrots, bottle gourd, and turmeric powder to the pot. Continue to cook on a low flame for another 15 minutes. Stir occasionally, and add more water if needed.

After 15 minutes, mix in the chopped spinach and crushed green chillies. Cook for an additional 5 minutes, allowing the spinach to wilt and the flavors to blend.

Turn off the heat and add the chopped tomatoes, blended coconut paste, and rock salt. Stir gently to combine. Cover the pot and let the khichdi rest for 5 minutes to absorb all the flavors.

Before serving, garnish the khichdi with freshly chopped coriander leaves. Pair with green chutney for added flavor.
