Directions
In a mixing bowl, combine whole wheat flour, blanched spinach puree, and salt.Gradually add water and knead the mixture into a smooth dough.
Cover and let it rest for 10 minutes.Divide the dough into equal portions and roll each portion into a ball.Heat a skillet or tawa over medium heat.
Take one dough ball and roll it out into a circle of desired thickness.
Place the rolled roti onto the hot skillet and cook for about 1 minute.Flip the roti and cook the other side until golden brown spots appear.
Brush the cooked roti with olive oil and repeat the process with the remaining dough balls.
Serve hot with your favorite curry or yogurt.
