quarter cup Peanut powder
quarter cup Dry coconut
1 tablespoon Roasted sesame seeds
1 teaspoon Red chilli powder
half teaspoon Turmeric
1 teaspoon Cumin powder
1 teaspoon Coriander powder
Salt as per taste
1 teaspoon Aamchur powder
4 pieces Garlic Cloves
1 inch Ginger
half cup Coriander leaves
quarter cup Besan(gram flour)
250 grams Okra(lady finger)
3 tbsp Oil
Tips
Ensure the okras are completely dry before stuffing to prevent sogginess.
Adjust spice levels according to your preference.
Store any leftover filling in an airtight container for future use.
Directions
In a mixer grinder, combine peanut powder, dry coconut, roasted sesame seeds, red chili powder, turmeric, cumin powder, coriander powder, salt, aamchur powder, garlic, ginger, and coriander leaves. Grind them to a coarse powder or paste consistency. Set aside.
Heat a pan and add besan. Roast it on medium flame until aromatic. Transfer it to a plate and let it cool.
Once cooled, add the besan to the previously prepared paste. Mix well to form a filling.
Wash the okra thoroughly and pat dry. Remove the front and end parts, then slit them vertically without cutting through completely.
Stuff each okra with the prepared filling mixture.
Heat a pan with oil. Place the stuffed okras carefully in the pan and shallow fry them until golden brown on all sides. Alternatively, you can air fry them for a healthier option.
Once cooked, serve hot with roti or rice.
