This versatile sauce is easy to make and uses healthy, natural ingredients such as tamarind and jaggery. 1 cup Jaggery
2 cups Water
1 teaspoon Black salt
half teaspoon Regular salt
half teaspoon Hing
1 teaspoon Dry ginger powder
Tips
Store the chutney in an airtight container in the refrigerator for up to 2 weeks.
Adjust the quantity of jaggery and spices according to your taste preference.
If the chutney is too thin, simmer it for a few more minutes to thicken.
Directions
In a bowl, soak the tamarind and jaggery in 2 cups of water for about 1 hour. This allows the tamarind and jaggery to soften.
Transfer the soaked mixture to a pan and bring it to a simmer over medium heat. Stir continuously until the mixture thickens slightly, around 10 minutes.
Remove the pan from heat and allow the mixture to cool slightly. Strain the mixture to remove the pulp, leaving behind a smooth, liquid chutney.
Add black salt, regular salt, hing, and dry ginger powder to the strained chutney. Mix well to incorporate all the spices.
Let the chutney cool completely. Once cool, transfer it to a clean jar or bottle for storage.
