80 grams Methi, fenugreek leaves
1 & half cups Wheat flour
2 tbsp Gram flour
2 tsp White sesame seeds
quarter teaspoon Asafoetida
1 teaspoon Carom seeds
1 teaspoon Salt
half teaspoon Turmeric powder
1 teaspoon Kashmiri red chilli powder
2 tbsp Ginger green chilli paste
2 tbsp Oil
quarter cup Curd
3 tbsp Water
Oil as per needed
Tips
For softer theplas, ensure the dough is not too stiff.
Keep the flame high while cooking to prevent the theplas from becoming crispy.
Directions
Prepare Methi: Separate methi leaves from stalks, wash thoroughly, and pat dry. Finely chop to yield about 1.5 cups.
Make Dough: In a large bowl, combine methi, both flours, sesame seeds, asafoetida, carom seeds, salt, turmeric, chilli powder, ginger-chilli paste, and oil. Add curd and gradually mix in water to form a semi-soft dough.
Rest the Dough: Shape into a ball, lightly oil the surface, cover, and let it rest for 10 minutes.
Roll and Cook: Divide the dough into small balls. Roll each into a thin thepla, using additional flour for dusting. Cook on a hot tawa, adding oil to each side until golden.
Serve: Enjoy your theplas hot with chunda, mango pickle, or curd.
