50 grams Sugar

Directions
Preheat the oven to 180°C (350°F). Grease a baking tray and line it with parchment paper.
Beat the egg whites until stiff peaks form. In a separate bowl, mix egg yolks and sugar until pale and fluffy. Gently fold in the sifted flour into the yolk mixture, followed by the beaten egg whites.
Spoon the batter into a piping bag and pipe finger-shaped cookies onto the tray. Bake for about 10 minutes, or until golden. Let them cool.
Mascarpone Cream

60 ml Espresso
25 grams Sugar
half teaspoon Vanilla extract
75 grams Mascarpone Cheese
60 grams Whipping cream
Directions
In a bowl, whisk the egg yolks with sugar until creamy.
Add the vanilla extract and mascarpone cheese to the mixture.
Mix until smooth and combined.In a separate bowl, whip the whipping cream until soft peaks form.
Gently fold the whipped cream into the mascarpone mixture to create a light and airy filling.
