Veg Chowmein is a delightful stir-fried noodle dish that hails from Chinese cuisine but has been widely embraced in many parts of the world, especially in India. This vibrant and savory meal combines fresh vegetables with noodles, making it not only delicious but also visually appealing. Ingredients

200 grams Noodles
Salt as per taste
4 tbsp Oil
1 tablespoon Ginger, Chopped
1 tablespoon Garlic, Chopped
2 pieces Green chillies
1 piece Onion, Sliced
1 piece Carrots, Shredded
1 piece Capsicum, Shredded
half piece Cabbage, Shredded
half teaspoon Sugar
2 tbsp spring onion bulbs
half teaspoon White pepper powder
1 teaspoon Dark soy sauce
half teaspoon Vinegar
1 tablespoon Ketchup
1 tablespoon Red chilli sauce
half cup Spring onion greens
Directions
Boil water in a pot, add salt, and then add noodles.
Boil for 30 seconds, then cover and let sit for 2-2.5 minutes.
Drain and rinse under cold water. Drizzle oil to prevent sticking.
Heat oil in a wok over high heat. Add ginger, garlic, and green chillies. Stir-fry for a minute.
Add onions, carrots, capsicum, cabbage, and a pinch of sugar. Stir-fry for 30 seconds.
Add spring onion bulbs, boiled noodles, white pepper powder, salt, dark soy sauce, vinegar, ketchup, and red chilli sauce. Stir well and cook for a minute.
Garnish with spring onion greens and serve hot.
Servings: 3-4 people
