Misal, a popular Maharashtrian dish, is known for its spicy, tangy flavors and hearty texture. Traditionally made with oil and an array of spices, this zero-oil healthy version is perfect for those looking to enjoy this classic dish while keeping it light and nutritious. With a mix of sprouted moth beans and whey water, this recipe is not only tasty but also packed with health benefits.

Ingredients

2

quarter teaspoon Cumin seeds

quarter teaspoon Mustard seeds

1 piece Onion

quarter cup Tomato puree

1 & half tsp Salt

5 pieces Garlic Cloves

1 inch Ginger

quarter cup Fresh coconut

quarter cup Coriander leaves

1 tablespoon Kolhapuri chutney

1 cup Sprouted moth beans

2 cups Whey water

Tips

Adjust the spiciness of the dish by varying the amount of Kolhapuri chutney.

If you don’t have whey water, you can use plain water, though it may slightly alter the taste.

Garnish with fresh coriander for added flavor and freshness.

Directions

Place a pan on medium heat and add 0.25 teaspoon cumin seeds and 0.25 teaspoon mustard seeds. Sauté until they start to splutter.

Add 1 chopped onion to the pan. Sauté until the onion becomes translucent. Add a little water if needed to avoid burning.

Mix in 0.25 cup tomato puree and 1.5 teaspoon salt. Stir well and continue to sauté until the mixture thickens.

In a blender, combine 5 cloves garlic, 1 inch ginger, 0.25 cup fresh coconut, and 0.25 cup coriander leaves. Blend to form a smooth paste.

Add the prepared paste to the pan and sauté well until the raw smell disappears.

Mix in 1 tablespoon Kolhapuri chutney and stir to combine.

Add 1 cup sprouted moth beans and 2 cups whey water. Stir well, cover, and cook for about 15 minutes or until the beans are tender.

Garnish with farsan (if using) and chopped onions. Serve hot with your choice of bread.

Notes

Avoid if you have a sensitivity to garlic or ginger.

People with kidney issues should be cautious with the intake of whey water due to its protein content.
